on a cupcake.... who woulda thought it could be so tasty! This is a recipe I got from a cupcake aficianado, she calls it the french toast cupcake and it is awesome! I made a batch for Steve to take to a work dessert day, and had to get a little picture just for fun! Here is the recipe for those of you so inclined to try them! And if the bacon makes you nervous- don't worry, they are amazing even without it!
French Toast Cake/Cupcakes
1 box white cake mix
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon nutmeg
3 eggs
1 cup half and half (I just used milk)
1 lb. Bacon cooked, or bacon bits for topping
Maple sugar (optional)
Mix together cake mix, vanilla, cinnamon, nutmeg, eggs and half and half. Scoop batter into paper liners filling ¾ full. Bake until golden brown at 350 degrees for 15-18 minutes. Batter will be thick. Remove from the oven and cool completely. Serve with maple butter cream frosting and bacon if desired!
Maple Buttercream Frosting
1 ½ teaspoons Maple flavoring
1 stick butter, softened
3-4 tablespoons milk or cream
1 lb. Powdered sugar
Cream together butter, flavoring, milk and powdered sugar to desired consistency. Spread on top of cooled cupcakes, top with bacon and maple sugar (optional).
